This recipe came out of a need for a quick meal. I have left my computer in Alabama so I have had to learn how to use my iPhone quickly. This gave me the inspiration for tonight's dinner. The layout may be odd by I'm doing this from my iPhone.
You will need:
4 skinless. Chicken breast
Parmasian cheese
Light or regular mayo.
Salt and pepper
Place rinsed chicken in oven proof dish.
Salt and pepper to taste
Cover each chicken breast with 1 tsp. mayo
Sprinkle cheese to cover all the chicken for a crust.
Bake in oven at 350 degreese until done 30 mins
Serve with steamed Vegitables.

National Peach Month
Hi folks,
August 18th is bad poetry day and I couldn't find a recipe for that so I looked around and found that August is National peach month. Peaches are good this time of year and the weather is still HOT. I looked around in my recipes and found something to help cool us down a bit. So in honor of my friend and Georgia peach herself Mary Anne Stockton here is a Peach Ice Cream Pie recipe for you and all my friends.
Peach Ice Cream Pie
1/2 pint vanilla ice cream
1/2 pint peach ice cream
2 large ripe peaches
1 small tub whipped topping
1 graham cracker crust pie shell
1/4 cup sugar
1) Peal peaches and slice into thin slices and mix with sugar cover and set aside.
2) Soften vanilla ice cream and pour into graham cracker crust pie shell.
3) Evenly place of the peach slices on top of vanilla ice cream.
4) Soften peach ice cream and pour over peaches.
reserve 6 to 10 slices for garnish
5) Cover ice cream with whipped topping.
6) Use left over peach slices to garnish top of pie.
7) Cover top and place in freezer for 2 hours.

Grandma Minnie
My Grandma Minnie was a fabulous cook. She cooked for her large family and anyone who entered her house. You couldn't visit her without eating at her table. Even if you just ate you would eat again at her house. If you required a special diet she could fix it. If you liked sweets she had them. If you were in a hurry she had it already made. No one left her house hungry.
Now about my Aunt Mary. She was a professional cook. She cooked in schools back in the day when they cooked in schools. She made those oatmeal chocolate cookie that everyone loves. She made the best yeast rolls from scratch and her Thanksgiving dinner was oh so good. her house always smelled so country good.
Both of these ladies influenced my cooking and with this blog I will share their cooking and my memories. I hope you enjoy both.
